- 1 medium onion (diced)
- 2 tbsp taco seasoning (store-bought or homemade)
- 1 can (14.5 oz) diced tomatoes (with juices)
- 1 cup shredded cheddar cheese
- Tortilla chips or tortillas (for serving)
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers until softened, about 5 minutes.
- Increase heat slightly and add ground meat. Cook until browned and crumbly, about 6-8 minutes.
- Stir in taco seasoning and canned tomatoes; mix well.
- Reduce heat to low and let simmer for about 10 minutes.
- Sprinkle cheddar cheese on top, cover with a lid, and let melt (3-5 minutes).
- Serve hot with tortilla chips or warm tortillas.
