- Onion
- Zucchini
- Fresh spinach

Instructions
- Chop all vegetables into small pieces and grate the cheese.
- Heat olive oil in a skillet over medium heat; sauté onions and bell peppers until softened (about 5 minutes).
- Add zucchini and spinach; cook until spinach wilts and zucchini is tender.
- Place one tortilla in the skillet, sprinkle half with cheese and half with sautéed vegetables, then fold over.
- Cook each side for 3-4 minutes until golden brown and cheese melts.
- Slice into wedges and serve warm with your choice of dips.
