Instructions
- Prepare all ingredients by chopping vegetables and green onions into small pieces.
- In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat until shimmering.
- Add mixed vegetables and stir-fry for 3-5 minutes until tender yet crisp.
- Push the vegetables to one side and add cooked rice, breaking apart any clumps.
- Pour soy sauce and sesame oil over the rice; mix thoroughly and cook for an additional 3 minutes.
- Garnish with chopped green onions before serving.
