- 8 oz penne or rotini pasta
- 1 lb lean ground beef or turkey
- 1 packet (1 oz) taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers (mixed colors)
- 1/2 cup diced onion
- 1 cup tomato sauce
- 1/2 cup sour cream (for topping)
- Fresh cilantro (optional, for garnish)
Instructions
- Cook the pasta: Boil salted water in a large pot and cook the pasta according to package instructions until al dente. Drain and set aside.
- Sauté the meat and veggies: In a large skillet over medium heat, cook the ground meat until browned. Add onions and bell peppers; sauté until softened.
- Add seasoning and sauce: Stir in taco seasoning and tomato sauce, mixing well. Allow to simmer for about 5 minutes.
- Combine: Add the drained pasta to the skillet, tossing to coat evenly with the meat sauce.
- Cheese it up: Lower heat, sprinkle cheddar cheese on top, cover briefly to melt.
- Serve: Dish into bowls and top with sour cream and cilantro if desired.
