- 1 lb boneless chicken thighs
- 1 tbsp fresh ginger, minced
- 3 garlic cloves, minced
- 2 tsp chili powder
- 1 tsp cumin
- 2 tbsp lime juice
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, mix minced ginger, garlic, chili powder, cumin, lime juice, salt, and pepper until well combined.
- Add chicken thighs to the marinade and coat thoroughly. Let marinate for at least 30 minutes.
- Heat vegetable oil in a skillet over medium-high heat until shimmering.
- Sear the marinated chicken thighs for 5-7 minutes on each side until golden brown and cooked through.
- Optional: Add sliced bell peppers in the last few minutes of cooking for added color and crunch.
- Remove from heat and let rest for a few minutes before slicing. Serve with rice or tortillas.
