Instructions
- Rinse jasmine rice until water runs clear, then combine with 1.5 cups water in a saucepan. Bring to a boil, cover, and reduce heat to low for about 15 minutes until fluffy.
- Heat vegetable oil in a skillet over medium heat. Season shrimp with salt and paprika; sauté for about 5 minutes until pink and opaque.
- In a small bowl, mix mayonnaise and sriracha; adjust spiciness as desired.
- Assemble bowls: start with rice, layer on shrimp, drizzle spicy mayo, and top with sliced green onions.
