- 3–4 boneless, skinless chicken breasts
- 2 tablespoons Southwest seasoning blend
- 1 cup sliced bell peppers (mixed colors)
- 2 cups crisp lettuce (iceberg or romaine)
- 4 large flour tortillas
- 1 avocado, sliced
- ½ cup sour cream or Greek yogurt
- Juice of 1 lime
Instructions
- Season chicken breasts with Southwest seasoning and let sit for 15 minutes.
- Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until golden brown and cooked through. Remove from skillet and slice.
- In the same skillet, sauté sliced bell peppers for about 5 minutes until softened.
- Lay out tortillas and layer with lettuce, sliced chicken, sautéed peppers, and avocado.
- Top each wrap with sour cream or Greek yogurt and a squeeze of lime juice before rolling tightly.
- Cut in half diagonally and serve immediately with lime wedges.
