  • 34 boneless, skinless chicken breasts
  • 2 tablespoons Southwest seasoning blend
  • 1 cup sliced bell peppers (mixed colors)
  • 2 cups crisp lettuce (iceberg or romaine)
  • 4 large flour tortillas
  • 1 avocado, sliced
  • ½ cup sour cream or Greek yogurt
  • Juice of 1 lime

Instructions

  1. Season chicken breasts with Southwest seasoning and let sit for 15 minutes.
  2. Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until golden brown and cooked through. Remove from skillet and slice.
  3. In the same skillet, sauté sliced bell peppers for about 5 minutes until softened.
