- 4 boneless, skinless chicken breasts (about 1 lb)
- ½ cup buffalo sauce
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- ½ cup blue cheese crumbles
- ¼ cup ranch or blue cheese dressing
Instructions
- Preheat oven to 375°F (190°C). Season chicken with salt and pepper on a lined baking sheet. Bake for 25-30 minutes until cooked through.
- In a saucepan over low heat, melt butter and mix with buffalo sauce; set aside.
- Once the chicken has cooled slightly, chop into bite-sized pieces.
- In a large bowl, toss chicken with buffalo sauce. Add lettuce, tomatoes, cucumber, red onion, and blue cheese; mix well.
- Drizzle dressing over the salad and toss gently before serving.
