- 1 lb ground chicken
- 1/2 cup fresh breadcrumbs
- 1/4 cup fresh parsley, chopped
- 2 garlic cloves, minced
- Zest of 1 lemon
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup orzo pasta
- 3 tbsp extra virgin olive oil
- 1/3 cup crumbled feta cheese
Instructions
- Preheat oven to 400°F (200°C). In a bowl, mix ground chicken, breadcrumbs, parsley, garlic, lemon zest, oregano, salt, and pepper.
- Form mixture into 1-inch meatballs and place on a parchment-lined baking sheet. Drizzle with olive oil.
- Bake for about 20 minutes until golden brown and cooked through.
- Cook orzo according to package instructions; drain and set aside.
- In a skillet, combine olive oil and lemon juice over medium heat. Toss in cooked orzo and season with salt and pepper. Add feta cheese before serving.
- Serve meatballs over orzo, drizzling any remaining sauce on top.
