- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cups fresh broccoli florets
- 4 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 1 cup sour cream
- 2 tbsp freshly squeezed lemon juice
- ½ cup grated Parmesan cheese
- 1 tbsp Dijon mustard
- 1 cup low-sodium chicken broth
Instructions
- Wash broccoli and cut into bite-sized florets. Mince garlic.
- In a bowl, mix olive oil, salt, pepper, garlic, and lemon juice. Add chicken breasts to marinate for at least 30 minutes.
- Preheat grill to medium-high heat (375°F). Grill chicken for 6-7 minutes per side until fully cooked.
- In a skillet over medium heat, sauté broccoli in olive oil for about 4-5 minutes until tender-crisp.
- In another pan over low heat, combine sour cream, Dijon mustard, garlic, chicken broth, and Parmesan until smooth.
- Slice grilled chicken and assemble bowls by layering broccoli first, then chicken, topped with creamy garlic sauce.
