  • 4 cups fresh broccoli florets

  • 2 tbsp extra virgin olive oil

  • 1 cup sour cream
  • 2 tbsp freshly squeezed lemon juice
  • ½ cup grated Parmesan cheese
  • 1 tbsp Dijon mustard
  • 1 cup low-sodium chicken broth

Instructions

  1. Wash broccoli and cut into bite-sized florets. Mince garlic.
  2. In a bowl, mix olive oil, salt, pepper, garlic, and lemon juice. Add chicken breasts to marinate for at least 30 minutes.
  3. Preheat grill to medium-high heat (375°F). Grill chicken for 6-7 minutes per side until fully cooked.
  4. In a skillet over medium heat, sauté broccoli in olive oil for about 4-5 minutes until tender-crisp.
  5. In another pan over low heat, combine sour cream, Dijon mustard, garlic, chicken broth, and Parmesan until smooth.
  6. Slice grilled chicken and assemble bowls by layering broccoli first, then chicken, topped with creamy garlic sauce.
