 - 8 small corn or flour tortillas
 - 2 tablespoons olive oil
 - Juice of 1 lime
 - 1 ripe avocado, sliced
 - 1 cup pico de gallo or salsa
 
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
 - In a large bowl, toss cauliflower florets with olive oil and taco seasoning until evenly coated.
 - Spread the seasoned cauliflower on the baking sheet in a single layer and roast for 25-30 minutes until golden brown and slightly crispy.
 - While the cauliflower roasts, warm tortillas in a skillet for about 30 seconds per side.
 - Assemble tacos by layering roasted cauliflower onto each tortilla and topping with avocado slices, pico de gallo, and a squeeze of fresh lime juice.
