- 8 oz rotini or penne pasta
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 cup bell peppers (mixed colors), diced
- 1/2 medium red onion, finely chopped
- 1/2 cup olives (black or green), sliced
- 1/2 cup feta cheese, crumbled
- 1/2 cup Italian dressing (store-bought or homemade)
- 1/4 cup fresh herbs (basil or parsley), chopped
Instructions
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop cooking.
- While the pasta cools, prepare the veggies: dice the cucumber and bell peppers, halve the cherry tomatoes, and finely chop the red onion.
- In a large bowl, combine the cooled pasta with all chopped vegetables.
- Drizzle Italian dressing over the mixture and toss until everything is evenly coated.
- Gently fold in crumbled feta cheese and fresh herbs before serving.
