- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup fresh cilantro leaves
- 1/4 cup freshly squeezed lime juice (about 2 limes)
- 4 garlic cloves
- 2 mild green chili peppers
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Prepare the marinade: In a blender, combine cilantro, garlic, lime juice, green chili peppers, olive oil, salt, and pepper. Blend until smooth.
- Marinate the chicken: Place chicken breasts in a bowl or zip-top bag. Pour the marinade over the chicken, ensuring each piece is well-coated. Marinate for at least 30 minutes.
- Cook the chicken: Preheat grill or skillet over medium-high heat. Remove chicken from marinade and grill for 6–7 minutes per side until cooked through.
- Add flavor: Brush reserved salsa verde on top of chicken during the last minute of cooking.
- Rest and serve: Let the chicken rest for 5 minutes before slicing against the grain. Serve with extra salsa verde.
