- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 ears fresh corn (kernels removed)
- 2 tbsp freshly squeezed lime juice
- ½ cup crumbled cotija cheese
- 1 tsp chili powder
- 1 tsp garlic powder
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- 1. Preheat grill to medium-high heat.
- 2. Pat dry chicken breasts and season generously with salt and pepper.
- 3. In a bowl, mix corn kernels, lime juice, cotija cheese, chili powder, garlic powder, and a pinch of salt.
- 4. Grill chicken for 6-7 minutes per side until golden brown (internal temperature of 165°F).
- 5. Remove from grill and top each piece with the corn mixture immediately.
- 6. Let rest for 5 minutes before serving.
