- 4 medium bell peppers (red, yellow, or green)
- 1 cup cooked rice
- 1 lb ground beef or turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (no added salt)
- 1 cup shredded cheddar or mozzarella cheese
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tsp olive oil
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Cut tops off bell peppers; remove seeds and arrange upright in the dish.
- In a skillet over medium heat, add olive oil and sauté onions until translucent (about 5 minutes).
- Stir in ground meat until browned. Add cooked rice, diced tomatoes, garlic, cumin, paprika, salt, and pepper; cook until heated through.
- Stuff each pepper generously with the mixture and top with shredded cheese.
- Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10-15 minutes until cheese is bubbly.
