  • 4 medium bell peppers (red, yellow, or green)
  • 1 cup cooked rice
  • 1 lb ground beef or turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (no added salt)
  • 1 cup shredded cheddar or mozzarella cheese
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Cut tops off bell peppers; remove seeds and arrange upright in the dish.
  3. In a skillet over medium heat, add olive oil and sauté onions until translucent (about 5 minutes).
  4. Stir in ground meat until browned. Add cooked rice, diced tomatoes, garlic, cumin, paprika, salt, and pepper; cook until heated through.
  5. Stuff each pepper generously with the mixture and top with shredded cheese.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10-15 minutes until cheese is bubbly.
