- 1/2 cup diced bell peppers
- 1/2 cup fresh spinach, chopped
- 1/4 cup diced onions
- 1/4 cup shredded cheese (optional)
- Salt and pepper to taste

Instructions
- Prep: Dice bell peppers and onions; rinse spinach leaves.
- Whip: In a bowl, whisk egg whites until frothy (1-2 minutes).
- Sauté: Heat olive oil in a non-stick pan over medium heat. Add onions and bell peppers; cook for 3-4 minutes.
- Add Spinach: Stir in spinach until wilted (about 1 minute).
- Cook Omelette: Pour whipped egg whites into the pan over sautéed veggies and cook until edges set (2-3 minutes). Add cheese if desired.
- Fold & Serve: Gently fold the omelette in half, let it cool slightly, then enjoy.
