Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
  2. In another bowl, beat the eggs until frothy. Add ricotta cheese and milk; mix until smooth.
  3. Gently fold the wet mixture into the dry ingredients using a spatula. Avoid overmixing.
  4. Preheat a nonstick skillet over medium heat with melted butter.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form (about 2-3 minutes), then flip and cook until golden brown (1-2 minutes).
  6. Serve warm with maple syrup or toppings of your choice.
