- 1 cup ricotta cheese
- 1 cup all-purpose flour
- 2 tsp baking powder
- 2 large eggs
- 1/2 cup whole milk
- 2 tbsp sugar
- 1/4 tsp salt
- 2 tbsp melted butter
Instructions
- In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
- In another bowl, beat the eggs until frothy. Add ricotta cheese and milk; mix until smooth.
- Gently fold the wet mixture into the dry ingredients using a spatula. Avoid overmixing.
- Preheat a nonstick skillet over medium heat with melted butter.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form (about 2-3 minutes), then flip and cook until golden brown (1-2 minutes).
- Serve warm with maple syrup or toppings of your choice.
