- 8 oz halloumi cheese
 - 2 tbsp extra virgin olive oil
 - 2 tbsp freshly squeezed lemon juice
 - 1 tbsp fresh rosemary or thyme, chopped
 - 1/4 tsp black pepper
 
Instructions
- Slice halloumi into thick pieces (about ½ inch).
 - Pat slices dry with paper towels.
 - In a bowl, combine olive oil, lemon juice, chopped herbs, and black pepper. Add halloumi slices to the marinade and let sit for 10 minutes.
 - Preheat grill or grill pan over medium-high heat.
 - Grill halloumi for 3-4 minutes per side until golden brown and marked.
 - Serve warm, paired with fresh veggies or as desired.
