You’ll then finish with a white wine cream sauce, wide noodles and an extra helping of fresh Parmesan for a comforting dish that’ll warm your mouth and your soul.

INGREDIENTS:
1 pound Certified Angus Beef ® top sirloin cap, cut into 1/2-inch cubes
4 tablespoons Cajun seasoning, divided
16 ounces pappardelle or fettuccine pasta
2 teaspoons canola oil
1 tablespoon unsalted butter
1 medium shallot, peeled and minced
1 tablespoon (2 to 3 cloves) minced garlic
1/4 cup white wine
1 (14.5-ounce) can diced tomatoes
1 cup chicken stock
1 1/2 cups heavy cream
3/4 cup grated parmesan cheese, plus extra for garnish
3 scallions, cut on bias for garnish
