Today's lesson in the Meat Lab focuses on Ground Beef Fat Percentages. When talking about #CertifiedAngusBeef ground beef, you'll often hear terms like 80/20, 75/25, or 90/10 thrown around. The first number is the lean percentage, while the second represents the fat percentage.

You might have heard that the higher the lean percentage, the healthier it is. However, when cooking ground beef, it's the fat and water that break down. This means that cooking a 75/25 burger, for example, will render down to a fat percentage similar to 80/20 – resulting in just a 7 calorie difference! That's the same amount as a single ketchup packet!🍔🍅
