Spatchcocking a Turkey is a simple process - and Malcom explains his method in only 1 minute.

When you Spatchcock a Turkey, it makes the Turkey lay flat, helps it cook evenly and speeds up the cooking process all together.

To Spatchcock a Turkey, you first need to remove the backbone. First cut the skin so you can access the backbone. Then use a pair of kitchen shears and cut down each side of the backbone.

Once the spine is removed located the small “U” shaped bone at the front of the breast. Cut through this bone about ¼” but be careful not to go all the way through the skin. The Turkey should lay completely flat now.

Flip the Turkey skin side up and either remove the wing tips - or tuck the wing tips behind the bird.
