  • Total Time: 50 minutes
  • Yield: Serves approximately 6

Ingredients

Scale
  • 1 lb lean ground beef
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can kidney beans, drained
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers, diced (any color)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt & pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions and minced garlic until fragrant.
  2. Add the ground beef, breaking it apart as it cooks until browned—about 5-7 minutes. Drain excess fat if needed.
  3. Stir in diced bell peppers along with chili powder, cumin, salt, and pepper; cook for 2 minutes.
  4. Pour in crushed tomatoes and kidney beans; stir to combine all ingredients.
  5. Bring the mixture to a gentle boil, then reduce heat and let it simmer uncovered for 30-40 minutes.
