- 1 lb Italian sausage (spicy or mild)
- 1 cup small pasta (such as shells)
- 28 oz canned crushed tomatoes
- 4 cups low-sodium vegetable broth
- 2 cups fresh spinach
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup bell peppers, diced
- ½ cup grated Parmesan cheese
- 2 tsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic; sauté until translucent.
- Crumble the Italian sausage into the pot and cook until browned.
- Stir in diced bell peppers and sauté until softened.
- Add crushed tomatoes and vegetable broth; bring to a gentle boil.
- Stir in pasta and reduce heat to simmer. Cook according to package instructions until al dente.
- Fold in fresh spinach just before serving; top with grated Parmesan cheese.
