- 1 lb ground beef or sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
- 28 oz canned diced tomatoes (fire-roasted preferred)
- 4 cups beef broth
- 8 oz lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add a splash of olive oil and sauté the diced onion until soft (3-5 minutes). Add minced garlic and stir until fragrant.
- Crumble in the ground meat and cook until browned.
- Pour in canned diced tomatoes and beef broth; stir to combine.
- Add broken lasagna noodles and bring to a gentle boil. Reduce heat and simmer for about 10-12 minutes until noodles are tender.
- Remove from heat, fold in ricotta cheese until creamy, then sprinkle mozzarella on top and cover until melted.
- Serve hot, garnished with fresh basil if desired.
