- 1 lb spicy Italian sausage (or mild)
- 1 cup long-grain rice
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 3 cups low-sodium chicken broth
- 1 tsp paprika
- 1 tsp dried oregano
- ½ tsp black pepper
- 2 tbsp olive oil
- Fresh parsley or green onions for garnish
Instructions
- Slice the sausage into bite-sized pieces. Chop all vegetables: bell peppers, onion, and garlic.
- In a large skillet over medium heat, add olive oil and sauté sausage until browned (5-7 minutes). Add onions and garlic; cook until fragrant.
- Stir in rice to coat with drippings. Pour in chicken broth; bring to a gentle simmer.
- Cover and reduce heat; cook for about 20 minutes or until rice is tender and liquid is absorbed.
- Stir in fresh parsley or green onions before serving. Adjust seasoning as desired.
