- 2 cups low-sodium vegetable broth
- 1 tbsp olive oil
Instructions
- Prep Your Ingredients: Gather and chop onions, mince garlic, and dice bell peppers.
- Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add onions and bell peppers; cook for about 5 minutes until soft.
- Brown the Turkey: Increase heat slightly; add ground turkey and cook until browned, breaking it apart with a spatula (7-10 minutes).
- Add Garlic & Spices: Stir in minced garlic, chili powder, and cumin; sauté for another 1-2 minutes until fragrant.
- Incorporate Remaining Ingredients: Pour in diced tomatoes (with juices), drained beans, and vegetable broth. Mix thoroughly.
- Simmer & Serve: Bring to a boil then reduce heat; let simmer uncovered for 30-40 minutes until thickened. Serve hot with your favorite toppings.
