- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 tsp baking soda
- ½ tsp salt
- 2 large eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup sweetened coconut flakes
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt.
- Create a well in the dry ingredients and add eggs, buttermilk, oil, and vanilla. Mix until just combined; lumps are okay.
- Divide batter evenly between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- While cakes cool, make the frosting by combining coconut flakes, pecans, evaporated milk, sugar, butter, and vanilla in a saucepan over medium heat; stir until bubbly and then cool slightly before frosting.
