Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the chicken and pat it dry. Season generously with salt and pepper inside and out.
- In a bowl, mix honey, Dijon mustard, and olive oil until smooth.
- Brush the glaze all over the chicken for thorough coating.
- Roast in the oven for about 1 hour and 15 minutes, or until internal temperature reaches 165°F (75°C).
- Allow to rest for 10 minutes before carving and serving.
