- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 ½ tsp baking powder
- 1 tsp salt
- 2 large eggs (room temperature)
- 1 cup whole milk (or almond milk)
- ½ cup vegetable oil (canola recommended)
- 2 tsp pure vanilla extract
- 1 cup boiling water
Instructions
- Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and dust lightly with flour.
- In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt until fluffy.
- In another bowl, beat eggs; add milk and vegetable oil, mixing until smooth. Stir in vanilla extract.
- Gradually combine wet ingredients with dry mixture using medium speed for about 2 minutes.
- Carefully stir in boiling water until the batter is smooth; it will be runny.
- Divide batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Allow cakes to cool in pans for 10 minutes before transferring them to wire racks to cool completely.
- Frost with your favorite icing and enjoy!
