- 200g dark chocolate (70% cocoa)
- 1 cup heavy cream
- 1/3 cup granulated sugar
- 3 large eggs (room temperature)
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Melt the dark chocolate in a heatproof bowl over simmering water until smooth.
- In a separate bowl, whip the heavy cream until soft peaks form; be careful not to overwhip.
- Beat the egg yolks and granulated sugar in another bowl until thick and pale (about 3 minutes).
- Gradually fold the melted chocolate into the egg mixture along with the vanilla extract.
- Gently fold in the whipped cream until just combined.
- Spoon the mousse into individual cups and refrigerate for at least 2 hours to set.
