- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar (divided)
- 24 oz Philadelphia cream cheese, softened
- 1 cup sour cream
- 2 tsp vanilla extract
- 4 large eggs
- 1 tsp lemon zest
Instructions
- Preheat oven to 325°F (160°C). Grease the sides and bottom of a springform pan.
- In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar; press into the bottom of the pan.
- Beat cream cheese until smooth; gradually add remaining sugar. Mix in sour cream, vanilla extract, and lemon zest.
- Add eggs one at a time on low speed until combined; avoid overmixing.
- Pour filling over crust and bake for 60-70 minutes until edges are set but center is slightly jiggly.
- Cool in the oven with door ajar for an hour before refrigerating. Chill before serving.
