  • 8 oz fettuccine or penne
  • 2 large sweet onions, sliced
  • 2 tbsp unsalted butter
  • 1 cup low-sodium beef broth
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot; cook pasta until al dente. Drain and set aside.
  2. In a skillet over medium heat, melt butter and add sliced onions. Cook slowly for about 20 minutes until golden brown.
  3. Pour in beef broth; simmer while scraping up bits from the pan.
  4. Stir in heavy cream and thyme; let bubble for about 5 minutes until slightly thickened.
  5. Combine cooked pasta with the sauce, tossing to coat evenly.
  6. Top with grated Gruyère cheese and broil for 3-5 minutes until bubbly and golden.
