- 8 oz fettuccine or penne
- 2 large sweet onions, sliced
- 2 tbsp unsalted butter
- 1 cup low-sodium beef broth
- 1 cup heavy cream
- 1 cup grated Gruyère cheese
- 1 tsp fresh thyme (or ½ tsp dried)
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot; cook pasta until al dente. Drain and set aside.
- In a skillet over medium heat, melt butter and add sliced onions. Cook slowly for about 20 minutes until golden brown.
- Pour in beef broth; simmer while scraping up bits from the pan.
- Stir in heavy cream and thyme; let bubble for about 5 minutes until slightly thickened.
- Combine cooked pasta with the sauce, tossing to coat evenly.
- Top with grated Gruyère cheese and broil for 3-5 minutes until bubbly and golden.
