- 1 lb Italian sausage (spicy or mild)
- 1 cup heavy cream
- 1 cup diced bell peppers
- 1 cup fresh spinach
- 4 cups low-sodium chicken broth
- ½ cup freshly grated Parmesan cheese
- 2 tsp dried oregano
- 1 tsp dried thyme
- 2 cloves garlic (minced)
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, brown the crumbled Italian sausage until fully cooked.
- Add diced onions and bell peppers; sauté until softened (about 5 minutes).
- Pour in chicken broth, scraping up browned bits from the bottom of the pot.
- Stir in heavy cream and simmer for about 10 minutes until heated through.
- Add oregano, thyme, salt, pepper, and Parmesan cheese; adjust seasoning as needed.
- Fold in fresh spinach just before serving until wilted.
