Ingredients

  • 12 jumbo pasta shells
  • 1 cup seafood mix (shrimp, scallops)
  • 1 cup ricotta cheese
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 cup marinara sauce (store-bought or homemade)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water. Cook jumbo pasta shells until al dente according to package instructions. Drain and set aside.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
  3. In a mixing bowl, combine the seafood mix with ricotta cheese, heavy cream, Parmesan cheese, half of the marinara sauce, salt, pepper, basil, and parsley until creamy.
  4. Preheat oven to 375°F (190°C). Stuff each pasta shell with the seafood mixture and place them seam-side up in a baking dish with remaining marinara sauce.
  5. Cover with foil and bake for 25 minutes; remove foil during the last 10 minutes to brown tops slightly.
  6. Serve hot and enjoy!
