- 12 jumbo pasta shells
- 1 cup seafood mix (shrimp, scallops)
- 1 cup ricotta cheese
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1 cup marinara sauce (store-bought or homemade)
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Boil a large pot of salted water. Cook jumbo pasta shells until al dente according to package instructions. Drain and set aside.
- In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
- In a mixing bowl, combine the seafood mix with ricotta cheese, heavy cream, Parmesan cheese, half of the marinara sauce, salt, pepper, basil, and parsley until creamy.
- Preheat oven to 375°F (190°C). Stuff each pasta shell with the seafood mixture and place them seam-side up in a baking dish with remaining marinara sauce.
- Cover with foil and bake for 25 minutes; remove foil during the last 10 minutes to brown tops slightly.
- Serve hot and enjoy!
