- 9 no-boil lasagna noodles
- 4 cups fresh spinach
- 2 cups cremini mushrooms, chopped
- 8 oz cream cheese
- 1.5 cups shredded mozzarella cheese
- 0.5 cup grated Parmesan cheese
- 3 garlic cloves, minced
- 2 tsp Italian seasoning
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add chopped mushrooms and spinach, cooking until the spinach wilts.
- In a bowl, combine cream cheese, Italian seasoning, and a splash of milk until smooth.
- In a baking dish, layer the spinach-mushroom mix followed by lasagna noodles. Repeat layers until all ingredients are used, finishing with mozzarella on top.
- Cover with foil and bake for 25 minutes; remove foil and bake for an additional 15 minutes until golden brown.
- Let rest before serving for optimal flavor.
