- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ⅓ cup granulated sugar (for crust)
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 cup granulated sugar (for filling)
- 2 tsp vanilla extract
- 1 cup fresh strawberries, sliced
- 1 tbsp lemon juice
- 3 large eggs
Instructions
- Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan.
- In another bowl, beat cream cheese until smooth. Add sour cream, sugar, lemon juice, and vanilla; mix until creamy.
- Gently add eggs one at a time on low speed until just combined.
- Pour filling over crust and smooth the top with a spatula.
- Bake for 50-60 minutes until set with a slight jiggle in the center.
- Turn off oven; let cheesecake cool inside for an hour with the door ajar. Refrigerate for at least 4 hours or overnight before serving.
