  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar (for crust)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar (for filling)
  • 2 tsp vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 tbsp lemon juice
  • 3 large eggs

Instructions

  1. Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Add sour cream, sugar, lemon juice, and vanilla; mix until creamy.
  3. Gently add eggs one at a time on low speed until just combined.
  4. Pour filling over crust and smooth the top with a spatula.
  5. Bake for 50-60 minutes until set with a slight jiggle in the center.
  6. Turn off oven; let cheesecake cool inside for an hour with the door ajar. Refrigerate for at least 4 hours or overnight before serving.
