- 8 oz pasta (spaghetti or penne)
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 1/4 cup fresh basil, chopped
- 4 garlic cloves, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Boil the pasta in salted water until al dente according to package instructions.
- In a skillet over medium heat, sauté minced garlic in olive oil until fragrant (about 1-2 minutes).
- Add canned diced tomatoes (with juices) and simmer for 5-7 minutes.
- Stir in the heavy cream and let it bubble gently to thicken.
- Drain the pasta and toss it into the sauce until well coated.
- Finish with fresh basil and grated Parmesan before serving.
