Ingredients

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 400g cream cheese, softened
  • 200g sour cream
  • 150g honeycomb candy, chopped
  • 100g granulated sugar
  • 1 tsp vanilla extract
  • 200ml whipped cream

Instructions

  1. Preheat oven to 350°F (175°C). Combine crushed biscuits and melted butter in a bowl until mixed.
  2. Press the biscuit mixture into the bottom of a springform pan. Bake for 10 minutes until slightly golden. Allow to cool.
  3. In a large bowl, beat cream cheese and sugar until smooth. Mix in sour cream and vanilla extract.
  4. Gently fold in chopped honeycomb pieces into the cream cheese mixture.
  5. Pour the filling over the cooled crust, smoothing the top. Bake for 50-60 minutes until slightly wobbly in the center.
  6. Turn off the oven, crack open the door, and let cool inside for an hour before transferring to chill in the fridge for at least four hours or overnight.
