- 8 oz dark chocolate (70% cocoa), chopped
- 16 oz cream cheese, room temperature
- 1 cup granulated sugar
- 1 cup sour cream, full-fat
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup graham cracker crumbs
- 6 tbsp unsalted butter, melted
- 1 cup fresh raspberries
Instructions
- Preheat oven to 350°F (180°C). In a bowl, combine graham cracker crumbs with melted butter. Press into the bottom of a springform pan to form the crust.
- Melt dark chocolate using a double boiler or microwave until smooth; allow to cool slightly.
- In a mixing bowl, blend cream cheese, sugar, and sour cream until creamy. Add cooled chocolate and mix well.
- Incorporate eggs and vanilla extract one at a time, blending until just combined.
- Pour filling into prepared crust and bake for 50-60 minutes until set but slightly jiggly in the center. Cool to room temperature before refrigerating for at least four hours.
- Top with fresh raspberries before serving.
