  • 8 oz dark chocolate (70% cocoa), chopped
  • 16 oz cream cheese, room temperature
  • 1 cup granulated sugar
  • 1 cup sour cream, full-fat
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 1 cup fresh raspberries

Instructions

  1. Preheat oven to 350°F (180°C). In a bowl, combine graham cracker crumbs with melted butter. Press into the bottom of a springform pan to form the crust.
  2. Melt dark chocolate using a double boiler or microwave until smooth; allow to cool slightly.
  3. In a mixing bowl, blend cream cheese, sugar, and sour cream until creamy. Add cooled chocolate and mix well.
  4. Incorporate eggs and vanilla extract one at a time, blending until just combined.
  5. Pour filling into prepared crust and bake for 50-60 minutes until set but slightly jiggly in the center. Cool to room temperature before refrigerating for at least four hours.
  6. Top with fresh raspberries before serving.
