- 1 lb fresh shrimp, peeled and deveined
- 2 cups sweet corn (fresh or frozen)
- 1 cup heavy cream
- 4 cups low-sodium vegetable broth
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tsp Cajun seasoning
- 2 green onions, chopped (for garnish)
- 2 tbsp butter
Instructions
- Prepare your ingredients by chopping onions and garlic finely.
- In a large pot over medium heat, melt butter. Add the onions and garlic; sauté until fragrant and translucent.
- Stir in corn and pour in vegetable broth. Bring to a simmer.
- Add shrimp and Cajun seasoning; cook until shrimp turn pink (about 3–5 minutes).
- Use an immersion blender to purée the bisque until smooth, leaving some texture from the corn.
- Return pot to low heat; stir in heavy cream until well combined. Warm through without boiling.
- Serve hot, garnished with green onions.
