- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 1/2 cup evaporated milk
- 3 egg yolks
- 1 tsp pure vanilla extract
- 1 cup chopped pecans (toasted)
- 1 cup sweetened coconut flakes (toasted)
Instructions
- In a saucepan over medium heat, combine the sugar, butter, and evaporated milk. Stir constantly until the mixture bubbles and thickens slightly (about 10 minutes).
- Remove from heat and whisk in egg yolks and vanilla extract. Return to low heat for an additional 2-3 minutes until thickened further.
- Stir in the toasted coconut and pecans. Allow to cool slightly before spreading over your cake.
- Once cooled, generously spread the frosting over the cake layers and enjoy!
