- 1 tsp vanilla extract (or 1 vanilla bean)
- 2 tsp unflavored gelatin powder
- 1/2 cup whole milk
Instructions
- Bloom the gelatin: Sprinkle gelatin over 2 tablespoons of cold water in a small bowl and let it sit for about 5 minutes.
- Heat the cream mixture: In a saucepan over medium heat, combine heavy cream, sugar, and vanilla extract. Stir until the sugar dissolves and the mixture is steaming (do not boil).
- Incorporate gelatin: Remove from heat and whisk in the bloomed gelatin until fully dissolved.
- Pour into molds: Carefully divide the mixture into individual molds or cups, leaving space for toppings.
- Chill: Cover with plastic wrap and refrigerate for at least 4 hours or until set.
- Serve: To serve, run a knife around the edges of each mold before inverting onto plates. Garnish with fresh berries and mint leaves.
