  • 1 cup espresso or strong brewed coffee (cooled)
  • 24 ladyfingers
  • 8 oz mascarpone cheese (high quality)
  • ½ cup granulated sugar
  • 2 tsp pure vanilla extract
  • 2 large eggs (separated)
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. Brew the espresso or strong coffee and allow it to cool.
  2. In a mixing bowl, combine mascarpone cheese, sugar, vanilla extract, and egg yolks. Mix until smooth.
  3. In a separate bowl, whip egg whites until stiff peaks form; gently fold into the mascarpone mixture.
  4. Quickly dip each ladyfinger into the cooled coffee, ensuring not to soak too long.
  5. Layer half of the soaked ladyfingers in a rectangular dish, then spread half of the mascarpone mixture over them.
  6. Repeat with another layer of soaked ladyfingers followed by the remaining mascarpone mixture.
  7. Cover and refrigerate for at least 4 hours or overnight.
  8. Dust with cocoa powder before serving and slice into squares.
