- 1 cup espresso or strong brewed coffee (cooled)
- 24 ladyfingers
- 8 oz mascarpone cheese (high quality)
- ½ cup granulated sugar
- 2 tsp pure vanilla extract
- 2 large eggs (separated)
- Unsweetened cocoa powder (for dusting)
Instructions
- Brew the espresso or strong coffee and allow it to cool.
- In a mixing bowl, combine mascarpone cheese, sugar, vanilla extract, and egg yolks. Mix until smooth.
- In a separate bowl, whip egg whites until stiff peaks form; gently fold into the mascarpone mixture.
- Quickly dip each ladyfinger into the cooled coffee, ensuring not to soak too long.
- Layer half of the soaked ladyfingers in a rectangular dish, then spread half of the mascarpone mixture over them.
- Repeat with another layer of soaked ladyfingers followed by the remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours or overnight.
- Dust with cocoa powder before serving and slice into squares.
