Instructions
- Preheat your oven to 350°F (175°C). Grease or line a muffin tin.
- Grate the zucchini and squeeze out excess moisture with a clean kitchen towel.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Create a well in the dry ingredients and add eggs, vegetable oil, and vanilla. Mix gently until just combined.
- Fold in the grated zucchini and chocolate chips until evenly distributed.
- Spoon batter into muffin cups, filling each about two-thirds full. Bake for 18-22 minutes until golden brown and a toothpick comes out clean.
