Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and poppy seeds until combined.
- In another bowl, mix milk, eggs, vegetable oil, and almond extract until smooth.
- Gently fold the wet mixture into the dry ingredients using a spatula until just combined—don’t overmix.
- Fill each muffin cup two-thirds full with batter and top with sliced almonds if desired.
- Bake for 18-20 minutes or until golden brown and a toothpick comes out clean. Let cool slightly before transferring to a wire rack.
