- ¼ cup vegetable oil (for greasing)
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking sheet or line it with parchment paper.
- In a bowl, whisk together flour, baking powder, cinnamon, and sugar until combined.
- In another bowl, whisk eggs, milk, and vanilla until frothy. Gradually mix into the dry ingredients without overmixing.
- Gently fold in the diced apples using a spatula.
- Scoop mounds of batter onto the prepared baking sheet, spacing them about two inches apart.
- Bake for 20-25 minutes until golden brown and aromatic. Allow to cool slightly before serving.
