- 1 cup chickpeas (canned or soaked)
- 1 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 1/4 cup fresh parsley (chopped)
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1/4 cup all-purpose flour
- 1 tsp baking powder
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- If using dried chickpeas, soak them overnight; if using canned, drain and rinse.
- In a food processor, combine chickpeas, onion, garlic, parsley, cumin, coriander, flour, baking powder, salt, and pepper. Blend until smooth but slightly chunky.
- Shape the mixture into small balls and place on the prepared baking sheet. Drizzle with olive oil.
- Bake for 25-30 minutes until golden brown and crispy, flipping halfway through.
- Let cool slightly before serving warm.
