Ingredients

  • 1 cup chickpeas (canned or soaked)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup fresh parsley (chopped)
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. If using dried chickpeas, soak them overnight; if using canned, drain and rinse.
  3. In a food processor, combine chickpeas, onion, garlic, parsley, cumin, coriander, flour, baking powder, salt, and pepper. Blend until smooth but slightly chunky.
  4. Shape the mixture into small balls and place on the prepared baking sheet. Drizzle with olive oil.
  5. Bake for 25-30 minutes until golden brown and crispy, flipping halfway through.
  6. Let cool slightly before serving warm.
