- 2 medium sweet potatoes (about 500g)
- 1 can (15 oz) black beans, rinsed and drained
- 2 tsp olive oil
- 1 tsp ground cumin
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh cilantro (optional, for garnish)
- Lime wedges (optional, for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly, dry them, and pierce several times with a fork.
- Place the sweet potatoes on a parchment-lined baking sheet and bake for 45-60 minutes until tender.
- While the sweet potatoes are baking, heat black beans in a saucepan over medium heat with olive oil, cumin, garlic powder, salt, and pepper for about 5-7 minutes.
- Once baked, slice the sweet potatoes open lengthwise without cutting all the way through; fluff the insides with a fork.
- Spoon in the seasoned black beans and top with cilantro and lime wedges if desired.
