  • Total Time: 1 hour 10 minutes
  • Yield: Serves 2

Ingredients

Scale
  • 2 medium sweet potatoes (about 500g)
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)
  • Lime wedges (optional, for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly, dry them, and pierce several times with a fork.
  3. Place the sweet potatoes on a parchment-lined baking sheet and bake for 45-60 minutes until tender.
  4. While the sweet potatoes are baking, heat black beans in a saucepan over medium heat with olive oil, cumin, garlic powder, salt, and pepper for about 5-7 minutes.
  5. Once baked, slice the sweet potatoes open lengthwise without cutting all the way through; fluff the insides with a fork.
  6. Spoon in the seasoned black beans and top with cilantro and lime wedges if desired.
