- 3 tbsp sriracha sauce (adjust to taste)
- Juice of 1 lime
- 2 green onions (sliced)
- 1 cup mixed vegetables (bell peppers, cucumbers, etc.)
- Fresh cilantro (for garnish, optional)
Instructions
- Prepare the rice according to package instructions, using broth for extra flavor if desired.
- In a skillet over medium-high heat, add oil and cook shrimp for 3-4 minutes until pink and opaque.
- In a bowl, mix mayonnaise and sriracha until smooth; add lime juice and stir.
- Toss the cooked shrimp in the sauce until evenly coated.
- In serving bowls, layer rice, sautéed veggies, and top with bang bang shrimp.
- Garnish with sliced green onions and cilantro before serving hot.
