Ingredients

  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 cup whole milk
  • 2 tsp gelatin powder
  • 1 tbsp vanilla extract
  • 4 large egg yolks

Instructions

  1. Bloom the gelatin in cold water according to package instructions until soft.
  2. In a saucepan, heat milk, sugar, and half of the heavy cream over medium heat until warm (do not boil).
  3. Whisk egg yolks in a separate bowl until pale, then gradually add warm milk mixture while whisking.
  4. Return to saucepan and cook on low heat until thickened (about 5-7 minutes).
  5. Remove from heat and stir in bloomed gelatin until dissolved; fold in remaining heavy cream gently.
  6. Chill the mixture until set, then serve alone or garnished with fruits or chocolate.
