- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 cup whole milk
- 2 tsp gelatin powder
- 1 tbsp vanilla extract
- 4 large egg yolks
Instructions
- Bloom the gelatin in cold water according to package instructions until soft.
- In a saucepan, heat milk, sugar, and half of the heavy cream over medium heat until warm (do not boil).
- Whisk egg yolks in a separate bowl until pale, then gradually add warm milk mixture while whisking.
- Return to saucepan and cook on low heat until thickened (about 5-7 minutes).
- Remove from heat and stir in bloomed gelatin until dissolved; fold in remaining heavy cream gently.
- Chill the mixture until set, then serve alone or garnished with fruits or chocolate.
